Press L1 just before an attack lands to parry it. A parry makes a chime and staggers the attacker. You need six in a row, and getting hit breaks the chain.

Set the difficulty to Nightmare and turn on Invincible Mode, both under Settings > General. The count does not work reliably on lower difficulties, and Invincible Mode lets you practise without dying.
The five Arm Band charms widen the parry window, so it helps to have them first.
Go to the bridge fight at the start of Chapter X, Parallel Paths (sub-chapter The bridge). Take out Brutes and shield soldiers first. Soldiers with two daggers are the easiest to read. Let three or four surround you so the attacks come quickly.

Watch out

If six parries in a row do not unlock it, check that the difficulty is Nightmare, equip the Rusty Sword under Touchpad > Sophia > Blades and try again.
