Choose Slytherin at the Sorting Ceremony that ends the prologue. The Sorting Hat suggests a house first, and you can pick another instead. The trophy unlocks during the main quest Jackdaw's Rest, when you reach the Map Chamber under the castle, about two hours into a game with cutscenes skipped.

There is one such trophy per house, and a save's house can never be changed. Each house you did not pick for your main game needs a new game played to Jackdaw's Rest. Start each one in a free save slot, so your main save stays as it is. The house makes no difference to any other trophy.
