Gortash rules Baldur's Gate from Wyrm's Rock, the fortress on the bridge between Rivington and the Lower City in Act 3. His office is full of traps, so lure him out and fight him on the roof:

Attend his coronation first and do not fight him there.
Destroy the Steel Watch Foundry, so his mechanical guards stop patrolling. This is optional but makes the climb safe.
On the bridge to Wyrm's Rock, go left of the drawbridge, cast Feather Fall and jump down to the rocks below. Climb the vines and follow the path around to the west side.
Climb the ladder and vines onto the outer wall, pick the lock and go through. From the south-west corner, climb the scaffolding. Misty Step, Fly or Dimension Door get everyone up.
On the roof, disarm the two mines and leave the party by the ladder that leads down.
Send one nimble character down. Disarm the four traps in that room.
Attack Gortash from there, run back up the ladder and fight him on the roof with the rest of the party. Use single-target attacks, nothing that could set off a trap.
