Trailblazer's Scarlet Gourd: the horse gives it at your third meeting, at the New Thunderclap Temple in Chapter 3 (Urge Unfulfilled). If your edition included it as a bonus, claim it at any shrine instead.
Turtle Tear, a soak: it appears after the Apramana Bat in Chapter 3, so beat the bat on your first visit to the North Shore of the Bitter Lake.
Stained Jade Gourd: the Scorpionlord drops it in Chapter 4's Purple Cloud Mountain. Beat him before you enter Duskveil's arena.

Shen Monkey adds drinks, soaks and gourds to his shop at the start of Chapters 3 to 6, and sells two more only in New Game+. Some soaks drop at random. Enemies come back when you rest at a shrine, and plants grow back after 30 minutes of real time.
